Don't be a dick. People change. The grudge-holder is the nutcase here. She's gone above and beyond to punish. She's vindictive and nasty. Not ok.
Prove you believe that OP has changed by entrusting your children to her in the same way as OP's former employer.
It doesn't sound like op is working with children anymore. Yes, she screwed up, but that shouldn't haunt her the rest of her life and impact her employment in unrelated fields.

She never even said that she was a nanny or in childcare.
No, but she did say that it involved her employer's children. If she wasn't hired to provide childcare but in some other capacity that didn't involved the employer's children and she managed to do something to endanger the employer's children anyway, that's arguably even worse.

Are there any ideas that don’t involve a lawsuit or pissing her off further? I want to apologize but it’s been so long and she won’t even agree to see me.

Hugs OP.
Agree. We need to stop giving legal advice and show off where we really shine. Our Internet sleuthing skills. DCUM, figure out who this is!
I'd say there is a more than decent chance that she is the caregiver a PP referenced above. If so, I would think the previous employer might be amenable to taking down her post if the OP no longer is working in childcare. OP's transgressions were pretty awful.....do people change that drastically?

I would not imagine going this ballistic about anything but danger to my family.
