The admissions officers don't see this data but we still keep track.
So if you talk to former AO or pay for an admissions review from one of these big national College counseling firms (which I did) - that are fully staffed with former admissions officers - they will walk you through what they look at in the application and how race and ethnicity are or aren’t considered. They do note parents names, including maiden names. They do note languages spoken at home and fluency.
And if Spanish is a big part of your family life, they would absolutely expect a diversity or community essay about it along with anything related to culture.
So, you can decide what that means.
