But the military is drawn almost entirely from the latter. And regular people in rural areas, even the obese ones, deal regularly with a lifestyle that requires a hardier makeup… physical labor, sweating outdoors, bugs and animals, using tools with your own hands. The list goes on. A far cry from ordering DoorDash after yoga.

You are not entirely correct in the assumptions you are making about who is joining the military.
Military recruits are most often middle class people from the burbs - some rural, some urban, but mostly the burbs and from all over the country. Quite honestly for all of its shortcomings our military has always been on the forefront of diversity and is more representative of the country as a whole than any other organization - as it should be.
