Some people are crammers when it comes to extended family holidays and they find it perfectly normal to have people sleeping in common areas and/or on air mattresses in the name of Family Togetherness. Aunt sounds like one of those.

She probably assumed her daughters would be reasonable and fine with sharing a bed.
If it were my sister and me, we'd flip a coin (or take turns) and one of us would take the couch so our mom didn't have to.

Since OP has offered the hotel, the aunt could easily have said "okay that sounds fine" if the aunt wanted that. She clearly doesn't so I would just stay at her house.
As an aside, my family of four loves sharing a hotel room on vacations. It feels like a big family sleepover. My kids would literally be disappointed if we got two rooms.
