I could see Jill doing it, because I think Derick would encourage it. She'd probably need to go to community college first just to "catch up" on all the education she didn't receive in her teens. I think Jill is definitely capable of working hard and getting in a degree (probably in nursing.)
I'm not as sure about Jinger. She seems perfectly content with things as they are, and I think Jeremy is also content having a less educated wife. It seems like a power trip for him.
She seems like the one who has adopted her spouse's interests the most, of all the married siblings. She's moved to a sporty clothing style, wears Jordans, moved to LA. It could be her exploring a newfound freedom, but those characteristics also happen to be Jeremy's preferences as well.

To be fair, I would not attend my BIL's graduation. The after party at the house, maybe. But the hours long graduation? Bleh. Not to mention pandemic capacity limits.
