Unless your kids are really interested in photography, a Kodak disposable is fine.

Our kids use old iPhones for this. They take perfectly decent photos (and, obviously, they double as kindles and something to play audiobooks on).

my kids had those vtech kids digital cameras when they were little, but they're not good enough now that the kids are 8 and 10. We've moved on to the Instax Mini for fun at home, and then each has a low-model canon Powershot for travel and such.

DS loves his action cam https://www.vtechkids.com/product/detail/19081/KidiZoom_Action_Cam_HD for shooting videos. It is like a go pro but cheaper and easier.
