Watermelon is a great idea. If parents are staying, i might make a nice salad to go with.
If, for some reason, I didn't want to do choices, I'd do grilled cheese. In my experience, it's a popular choice.
I like this approach, give a couple options to the parent and see if their kid has a preference. One of my kids doesn’t like lunch meat but he would be happy with grilled cheese or Mac and cheese or PBJ. I sometimes serve frozen cheese pizza for lunch with sliced cucumbers and some fruit, you could do a nicer kind with a salad for the moms?
