this is my go-to recipe.
I don't find it overly sweet,

If you want something a little more low key (cheesecake is kind of an involved recipe) you could do cheesecake bars. That's usually what I do in the summer when I get a cheesecake craving because they are much faster and less labor intensive. You could probably even have your kid help you make them ("help") because she's at the age where that will be really fun for her.

My experience is that most toddlers love cheesecake/cheesecake bars because the graham cracker crust is 100% in their wheelhouse and it's a very approachable color and texture. My kid prefers cheesecake to regular cake for these reasons.

OP again, thank you, I think I will try finding this recipe. Lots of eggs is music to my ears, and you're right, she will love "helping" (i.e. I'll need a few extra eggs, etc. for her to mix).

I'm not policing anything, just would prefer to have a cake that's not overly sweet (I find most cakes to be sickly sweet, because that's a cheaper way to make them palatable than using flavorful ingredients).

New York Cheesecake is generally less sweet than some other recipes.

Thanks, didn't know this! -OP

OP here and I wish that were true but I've 'failed forward' on this topic, if you will.

To the other PP above, I did not know cheesecake was more forgiving than other recipes!

This is definitely not true (see eg meringue, macarons) but cheesecake is the most adaptable baked good I can think of for a big sugar reduction.

My kids loved cheesecake as toddlers, but they would not have considered it like either cheese or cake. And cake was among the first few words one said.

Agree. I love cheese, cake and cheesecake, but they aren't really related!

Anyway, I'd use Stella Parks' recipe for no-bake cheesecake since it's really hot right now. It is very good, and cheesecake is never very sweet to begin with. There are lovely strawberries in season now to top it with.

It’s a birthday cake. Cheesecake isn’t that sweet to start with. Making it with a normal amount of sugar is fine. Really. You don’t have to police every gram of sugar that goes into your toddler’s mouth.

We are planning to make cheesecake for my toddler's second birthday, since she loves cheese, and we all love cake.

I would like to err on the side of less sugar, but don't want to compromise the integrity of the entire cake by experimenting with existing recipes.

Does anyone happen to have a tried-and-true recipe for cheesecake that isn't overly sweet?
