Any recipe that suggests using "regular" limes is not authentic. There is a very distinct difference in the taste of Key limes and regular limes.

It's more technique than recipe and took some time to get the custard and egg whites right. But damn, it's been a good road to get there.
I've got a colleague who has chickens and brings me fresh eggs when I need them and they raise the bar for a meringue. Wish I could get double egg whites instead of double yolks...heh.Anonymous wrote:
