That’s a fantastic recipe, so I don’t think that’s being snobby at all. I’ve tried making it before and it is delicious and easy. What’s amusing to me is that when DH is cramming on a project at work he craves box mac & cheese, aka the latchkey kid special. “Fancy” mac & cheese just won’t scratch that itch.

Ground mustard is a GREAT idea! I haven't had that in my kitchen in years. I'm adding some Coleman's to grocery list. Thank you.

Vinegar will help balance out sweetness. For mac and cheese, I'd probably add a vinegar based hot sauce

Made Wegman’s Spiral Mac & Cheese vs. Annie’s. This tastes realily sweet. Is there a way to balance out the flavor? Something bitter or umami I could add? (Yes, I know it’s box Mac & cheese) thanks!
