I like to make a mushroom barley soup. It is hearty without being heavy. I don't use cream, as I find that the barley gives the broth a bit of a velvety moutfeel. I don't use a recipe -- but put in onions, carrots, celery, garlic, thyme, lots of sliced mushrooms, touch of marsala, broth (either chicken, beef, or veg), barley. Saute all of the veg, deglaze with the marsala, add broth and barley. Simmer for 1- 1.5 hours. Easy and delicious.

I really like this one. You could reduce the butter a bit I think. No cream in it.
