It can be a thankless job. I suggest establishing in advance what the club/coach will do when parents don't pay. We had to formalize a pay to play policy where if you were in arrears on your team fees, your child couldn't participate in tournaments or out of town league games. (e.g., the activities that were funded by team fees)
Also good to set up PayPal as an option 1) for convenience and 2) so parents who don't have cash can finance the cost on their credit cards.

Some clubs provide guidance. Some don't. Your best guide is probably the previous treasurer, or a treasurer from a different team who might be willing to spend thirty minutes with you.
I strongly recommend you try to get your club to sign up with ground work (https://www.ground.work/) - it makes collecting payments a whole lot easier.
