Gluten is silly. Unless you are coeliac you don't need to restrict gluten, there is no health benefit.
Perhaps she finds it hard to eat healthy with that stuff around. Could you compromise and put it away in a cupboard she doesn't use.

She has stopped picking up anything with bad oils or high fructose corn syrup. No more frozen pizzas or anything that is processed. We only eat that stuff now 1-2 times a week when we get takeout.

This! OP, I'm sorry but you're still eating pizza two times per week and you're complaining abut her rigid health kick? Plus you have kids, so having junk in the house means they'll go eat it every day now that they're home 24/7. Ask me how I know![]()
So she upgraded pots and pans, switched out the food storage containers, and changed cleaning supplies. I don't see how this is more restrictive for you.
The processed food is really bad for you. Could you compromise and make homemade pizza or other treats so at least it's healthier? Maybe you bake cookies once a week and that's your treat rather than keeping tons of junk around?

OP here. Those are just some examples. We don’t eat anything that basically has sugar, high levels of sodium, or is processed in our house unless we get takeout 1-2 times a week. No more gluten, white sugar in anything, nothing with regular sugar, no processed foods, no bad oils, etc. I’m at a healthy weight but we would always have some stuff to snack on or something easy to make like a frozen pizza. Even takeout is usually healthy with the occasional pizza or burger and fries 1-2 times a month.
