I’ve had literally every preparation mentioned in this thread and I agree with you OP. It can be made edible with enough oil and salt and garlic and other seasoning but it’s not *good*.

My favorite sushi place has a miso eggplant that’s incredible. Eggplant parm is delicious. And my mom used to make fried eggplant that was yummy.

I make this frequently, it’s amazing.
I also love pasta alla norma, baba ghanoush, caponata, and lots of curries with eggplant, chickpeas etc. Really I love it in everything!

Sliced broiled eggplant straight out of the garden is incredible. Smoked and mashed with roasted garlic. Drool.

Eggplant is awesome! I can't wait to start cooking with it again now that fall is coming. However, most people I know don't like it for one reason or another.

I love spicy eggplant. But yeah, it’s a pretty lackluster vegetable.

Someone gave me an eggplant and I made baked eggplant parmesan. Did the salting etc, panko crumbs with parmesan and garlic and Italian seasoning, ate some just that way and some with tomato sauce. It was fine. I've had moussaka too, a time or too years ago.

Still, I fail to understand why anyone would eat eggplant on purpose.
