Different body types, bone density, and body composition. I doubt you have a "medium" build if you're 5'7 and 120 and don't look too thin. You probably have small bones, or a narrow-set frame, low bone density, or maybe you're Asian. There is an objectively healthy range of body weights within CDC BMI guidelines, but within those different body types look and feel healthier at different weights within that range.

Shakes and smoothies. With my first pregnancy I had trouble gaining (and was not overweight to start) and a nutritionist recommended adding a shake with high nutrient ingredients (not powders or other crap like that but actual foods like but butter, yogurt, whole milk).

Yup, smoothies will help you with this problem. You can pack a lot of calories into a smoothie and it can still be healthy and not too filling.

I’m with you OP.

Smoothies with whey and nut butters are a good choice in the summer. I also eat a lot of avocado. And I love iced lattes with whole milk. I can also easily manage dark chocolate and the occasional ice cream in the summer. Otherwise it’s mostly lettuce I crave (though I use a fair amount of olive oil!) with a protein source.

Smoothies. Add a whole avocado to frozen fruit, whole milk and spinach. Could add ice cream too. Plus protein powder.

I workout early and most of the year make a high protein breakfast such as an omelette with turkey meat, avocado, cheese and vegetables. I then have mostly vegetables and lean protein the rest of the day with an apple or berries mixed in.

When it is this hot I've found that's the last thing i want, so generally have two hard-boiled eggs and a smoothie made from fresh fruit and vegetables with whey added.

Fish tacos with lots of cotija cheese and diced avocado. It's light and summery and full of protein, healthy fats and veggies.

I don’t feel as hungry but I still eat— boredom, love good, I love good. Try more cheese, full fat dairy, avocado, etc? Are you overly health conscious? Have you been checked out for health problems? Loss of appetite is concerning. It may be best to get a blood work up. Tell your doctor if eating makes you nauseated or vomit.
