First of all, it's not the fault of a lay person if they believe "Adam" was a real person. Christians have been taught for a thousand plus years that Adam was a person, so the fault lies with the "priests" who teach this.
Secondly, how do you really know that Adam was not real? I'm not saying it's one way or the other, I'm just curious how you would know this for a fact? It's like atheists saying that God is not real, but I assume you believe there is a God, right? Do you believe that Jesus was the son of God and came down to save us from our sins? Or is Jesus a "symbolism", too?
Third, I do believe that humans evolved; there's too much scientific proof of the evidence. What you stated makes sense in that regard but you sure do come off as not a "minister".
