friend who grew up poor told me when she was a kid they'd throw government cheese in a skillet to make crispy burned cheese. I love picking at the stuff that runs out of a cheeseburger into a frying pan and fries.

I thought chaffles would be an eastern european breakfast bread

OP here - I did 1 cup of cheese (mixed mozzarella and cheddar) to 1 egg and split the mixture in half for each chaffle in a mini-waffle maker. Not eggy at all. I ate it like a sandwich with my hands. not messy at all.

Someone recommended that I search different chaffle recipes for add-ins but I'm already considering adding a bit of seasonings for an herb-bread the next time.

Sorry, but ew! Tho I guess this is basically just an omelet with unconventional assembly. Do you eat with your hands (like a sandwich) or fork and knife (like a waffle)?

We love them. The Carb Smart fajita tortillas are also fantastic. Aldi has Keto bread, but I haven’t tried it yet

I've been eating low-carb (not keto) and while I will still have bread from time to time, I'd like to eliminate it as much as possible, while still feeling full. Then someone introduced me to chaffles (cheese and egg in a waffle iron) to replace bread in sandwiches. Where have these been all of my life?! Today's lunch was amazing and incredibly filling with turkey, spinach, & tomato between two mini homemade chaffles. I will definitely be doing this more often!
