Usually for a meeting where I work, refreshments are bottled water, coffee, tea, mixed fruit bowl, cheese & crackers, and pastries.

That is only for larger meetings with clients. For internal meetings, it's BYO and sometimes includes a dog or two.

Are you supposed to provide all of the refreshments for the meeting? Or were they asking what you'd provide and others will provide additional things?

I think I just made an embaresing mistake. I was asked what refreshments I would bring to a meeting and I only listed drinks. Does refreshment also mean snack foods? Is it a regional thing? Would you have known to include snack foods?
