The FIOS router doesn’t cost me anything. It supports gigabit and is a MoCA bridge. I doubt you can buy a router that does all that.

I have had Verizon for quite a few years. I hate paying rental on the router. If they want to rent me one, then I go to Best Buy and buy a decent router. Every few years, they have an offer to add a router as their sign-up incentive and if it isn't a monthly charge, I'll get it free or buy it for a discount. I currently have a FIOS router, but over the years have had both Verizon and Linksys routers I buy myself.

I have Verizon FIOS Internet, TV and Phone (land line required for work)
I do not use the Verizon router
FIOS connected to Synology Router (awesome router, amazing features) however I have disabled the WiFi on it and use three UniFi pros (1st, 2nd & Basement) for WiFi
I run Pie Hole on an old laptop with Ubuntu for Ad blocker, easy to setup and keeps itself updated. Software is all free and works incredible
TV service is through HD Homerun and 1 cable card, allows me to stream up to 4 channels simultaneously to any of my TVs. I also connected the HD Homerun to a home network server so that it acts a a DVR.

You can also put you Verizon brand router in bridging mode and then connect your own router behind it.

You can get a CAT5 connection to the ONT and then use a MoCA bridge for the STB. Verizon will just sell you the FiOS router as well. I will get around to trying to do one of these things this summer.

You only need to use the Verizon ones if you have their TV service (the STB gets the guide from the router).
Even if you have their tv service, you could buy your own router rather than rent.

If you do Internet only, or internet+phone, you can use any router. Their router works fine, but you can use your own generic one.
With the Verizon router though, the tech support can see your router password. Not good if you want everything locked down, but not bad for a grandparent who can't remember what they set.

Yes.

I use the Fios router and it's OK for me though there are better ones. If it's working you may have an option to buy the router for $100 or so and stop the rental fees.

I just bought a used Verizon Fios G1100 router from Amazon for about $80 and it works great with Fios internet.

I'm not sure Fios matters. You just want a good Wi-Fi router. The Fios fiber optic router connects to any Wi-Fi router with an Ethernet connection. I'd look at router advice on wirecutter.com.
