Love my new big apron sink. Doing Dishes suck a little less now.

I love my under-cabinet lighting and will never again have a kitchen without it.

I agree about the trash can but only that you consider it - in small kitchens it might make more sense to tuck it somewhere but be thoughtful so there is a logical, not obtrusive place.

A big pantry with outlets for small appliances and a place to hang a Dyson and a broom.

If you want to have two dishwashers it sounds like a big space so be thoughtful about where stuff is - you really want a small kitchen within your giant kitchen if you cook a lot where the sink, stove and prep space are accessible. At least the primary dishwasher should be close to dish storage, etc.

If something becomes decentralized I think beverages make sense to put in the hinterlands, especially if there will be a fridge drawer for cream and an ice maker. Everything for coffee, bar and soft drinks can go over there.

Yes to a pull-out spice rack. And drawers, drawers, drawers! The only lower cabinet we have is our lazy Susan in the corner and otherwise it's all drawers. It's so much better than cabinets. I also love our pull-out cabinets. So, basically pull-out everything.

Really? I have one and clean it about once per year. It's not appreciably dirtier than a normal cabinet.

An appliance caddy is great for hiding the coffee pot, toaster, and stand mixer, while still keeping them at the ready.

I have a built-in trash compactor. It was there when we bought the house, and I had no idea how much I would love it! We take out the trash no more than once a week, sometimes less, and there are no odors. I won't ever be without one again.

100% drawers (except for under sinks)

We currently have a range with two ovens and I love it. It came with the house so I didn't pick it out, but I will always have something like this going forward. Of course OP you may be planning on double wall ovens or something like that, but I've never had the ability to simultaneously bake at two different temperatures before and it's great since I use the oven tons.

Because my kitchen paper towels mysteriously travel around the house, I am really interested in the under-counter holders that have drawers behind them. I've seen the drawers used for rolls of foil, parchment paper, etc. or just for extra towels.

*I've reduced my paper towel consumption considerable, but I still use them for certain things.

We are gutting our kitchen and starting from scratch. What are some must haves we should incorporate (one of mine is two dishwashers) and what are some things you regret doing/not doing in your kitchen? Thank you for your ideas!
