I freeze stuff if I buy it and happen to have too much leftover but unless you live an hour from Costco and can rarely go, simply running over and buying the baguette fresh is going to be better than pulling an old frozen one out. I am also one of those people who absolutely notices a difference between fresh and frozen/thawed so YMMV.
Butter, pesto, shredded cheese, fruit for smoothies, lots of things are useful to have stowed. I only make it to costco 1 per month so I love these ideas. I buy blocks of cheese then shred and freeze. One time I had the most random selection of cheeses (gouda, gruyere, manchego) and I shredded and threw in a bag. When I had time to make mac and cheese, it was phenomenal.
