I presume by frankenfoods the PP is referring to the substitute meat products. Which really aren't any worse for you than the processed meat products they replace - I guarantee you vegetarian chicken nuggets and veggie dogs have less harmful and processed food bits than what they replace.
The problem though (and I really like these foods myself) is they usually tend to be more carbohydrates than proteins and the part of the vegetarian diet you need to do more planning to replace is proteins so if you are eating those foods as protein substitutes they aren't great as 1:1 replacements.
Its not hard to get adequate protein as a vegetarian but fake meat products alone really won't get you there and can be fattening.
