If this is about health or sustainably losing weight, I'd suggest going more plant based - that's the easiest road to eating cleanly.

Those are great goals! But I don't really get why you want to go 'low carb' - it's fine for a crash diet before a wedding or reunion or something, but long term is motivating and unhealthy. Follow Michael Pollan's advice: "eat food (real food, ie, clean food). mostly plants (fruits, vegetables, beans, legumes, nuts, seeds, etc). Not too much (don't stuff yourself silly).
Don't eat food that comes from a box. Eat foods that are whole and look recognizable to what they grew as. Cook. Don't worry about carbs. Eat the apple! Don't eat the cupcake (but sure, once in a while go for it). Carbs are not an enemy nutrient - it's about what kind of food carries the "carb."

To me low carb is no pasta, bread, sugar, pastries, rice but I don't calculate the carbs or cut any veggies. I'm 43 y/o with 3 small kids, 5'7 and 125 lbs so it works for me. I don't really have time to exercise a lot.
