Tandoor Chef has good samosas, in the frozen section at MOM's, Whole Foods and Wegmans. Sukhi's Kitchen samosas are also good, and I have seen them at Costco. Or try a few brands from the Indian store.

Thanks for the tips! I am excited to try again with better equipment. The Trader Joe’s ones were rejected by my DD but I didn’t think they were bad.

Biryanis are a bit tricky but the frozen samosas at Indian grocery stores (deep sells packs of 50) are passable.

Amazon has the Indian pressure cookers. Or go to Patel Brothers in Rockville. I got the Prestige Alpha 2-liter stainless steel cooker from Amazon.

Follow their tutorials. Everything is explained perfectly. I usually flash cook the veg and add tadka separately. You can also make 'bottled tadka' which is very covenient.

You can still use their techniques for cooking the veggies but do all the tadka and tempering seperately. Don't have to follow exactly.

I just requested to join as well. Can someone please explain the whole flash cooking of vegetables thing to me? I saw a video and there was no traditional tadka/thaalithal. the guy just added the uncooked mustard seeds and cumin seeds to the top of the vegetable. Is that normal? Like its just naturally oil-free? And how much water is usually required at the bottom ?

Uffff. People have been doing their own version of OPOS since ages. They are really crazy. Ignore the drama and take what is useful. Nothing beats the recipe book that came with Hawkins.

They have always taken pains to distinguish their method from traditional pressure cooking which often results in mushy food. There can be a cult-like vibe. I ignore the drama and just follow what's useful to me. Pressure baking is excellent for vegetables.
