OP here. Thanks everyone for your opinions! We decided on Montreal. It sounds perfect! I looked at Iceland but it's a little expensive for some in our group...there are a couple of us who still have kids in daycare so we're on a budget!

I think Sedona sounds nice for what you want and the travel to Phoenix is probably easier than Curacao and Mexico City. Montreal is a city so a bit different than your other options.
