Red lentil chili, the recipe was in the WaPo Magazine a few months ago. I have really gotten in to red lentils lately, very versatile and they cook much faster than dried beans. You can swap out beans in other recipes and make various kinds of pseudo-Indian curries.

Some sort of beans (about 1/2 a cup or 1/3 of a can) mixed with crushed tomatoes and vegetables and complementary spices, warmed up in a pan with an egg poached in them. Incredibly filling, lots of fiber and vitamins and protein, and lots of possible variations.

I bought a rice cooker. I make a batch of quinoa in it each week. I use the quinoa in salads or other meals.

Baked quinoa-stuffed bell pepper covered in melted cheddar cheese.

It keeps me from craving cheesy Mexican food. I add black beans, scallions, diced tomatoes, taco seasoning to the quinoa stuffing.

Sooo delicious.

Beluga lentils in instant pot (so faster) topped with cherry tomatoes, cucumbers, scallions, olive oil and a little crumbled feta.

I make tortilla soup and just leave out the tortillas—so basically chicken soup with a chili-lime kick. My kids can still add tortilla chips, cheese, sour cream if they want to.

Tuna salad with homemade mayo and extra veggies—tons of celery, onions, pickles, red bell peppers chopped finely.

Hard boiled eggs

Grill chicken or steak with plenty of seasoning (no sugary marinades!) and have it sliced and ready to throw on top of a salad

For breakfast throw a big handful or two of spinach in a skillet with some olive oil and when it’s wilted add a couple of beaten eggs. If I’ve got chopped onion or peppers on hand throw even better. Prosciutto it another great addition—a couple of super thin slices adds a lot of flavor.

Yankee Pot Roast from the Nom Nom Paleo cookbook—it has balsamic vinegar and dried porcini mushrooms in addition to the usual vegetables. Mashed sweet potatoes wth ghee on the side.

I also do a casserole with lots of veggies, Italian sausage and pizza sauce—I can rehear and eat that for lunch for a few days.

Boiled buckwheat, or barley if don't mind gluten. Add olive oil (or butter), eat warm.

Whatever your plan may be. I am looking for new healthier ideas for the new year. Deprivation and not being excited about the food I eat is no way to start a plan. I need to know I can eat healthy and still enjoy.
