I did. It was foolish to, but I loved the company. I just wasn't being promoted for a variety of made up reasons, so I went and hunted.
They countered 15% more pay plus a promise I'd be put up for promotion at next cycle as my boss agreed it was time. At the next cycle they didn't promote but she said she'd come trough for me at the end of the year "for sure".
I got a job paying a ton more a few weeks later, and quit again. Boss said she was surprised to which I answered "Really? I quit once 3 months ago because I was unchallenged and needed to move up to continue learning, did you think I was bluffing?" Boss replied that they thought I'd give them to the end of the year.
It was a mistake to stay. If they hadn't promoted me on merit it was silly to think they'd suddenly do so.
Very happy I left. I make a TON more now - probably double what I would have made with a promotion had I stayed. Only regret is not seeing the writing sooner.
