Idlewild in Ligonier (about an hour or so outside of the city) is a great option; if they like the water, Sandcastle water park is fun! Also second the Carnegie Science Center and Natural History Museum -- the dino exhibit is really something! The zoo is great, too -- there are penguins and a huge kids play area. Love PNC Park - cheap seats and beautiful views of the skyline.
Definitely do the incline (will be a quick part of a day), and two other museum recs are the Children's Museum and Heinz History Center. There are also some options for the rivers -- the Gateway Clipper fleet out of Station Square does boat tours, and I think there is still the Ducky land/water tours, too.
While you're there, in addition to checking out the Strip District's food samplings, stop by a Primanti Bros for the traditional sandwich with fries and coleslaw on top
