Add cheese like a goat cheese to the sandwich.

Make sure you take the gills off the mushrooms before cooking as well as de-seeding tomatoes. This will help your sandwiches not be soggy.

If someone doesn't do dairy make a separate cheese and tomato side salad and put sautéed spinach with garlic on the sandwich instead.

Since bread is a starch, and you have veggies, I would consider serving with a hearty red lentil soup.

Close with a fruit like melon and pineapple spears and cheese plate.

For starters, have nuts, olives, grapes.

First when should I come over?

Second, I would add a protein. Maybe either a thick slice of mozerrella on the sandwich or on the side with a a salad. Or some type of sals with beans.
