The skins are like bran. They add a lot of grittiness that you probably don't want. It's easy enough. Put hot nuts between two dishtowels and rub them around in a circular motion. Skins will come off.

You don't cook certain things with the nuts still having skins. It is very unattractive in the final products ( think about peanut brittle).

The skins usuallly add a bitter aftertaste. Most hazelnuts are used for sweet purposes, cakes and tortes.

Actually, I eat almonds with the skin. So, I guess not all. Still, just trying to figure out why for hazelnuts.
