Yea, well i make this (and add mustard greens) and to get enough for a potluck serving, youd need 5lbs of spinach . I highly doubt OP has that hanging around.

I make something that's basically spanakopita without the fuss of phyllo. I saute onions, sautee spinach, then beat a dozen eggs and mix together in a huge saute pan, and crumble in hunks of feta. Salt, pepper, and a touch of oregano, and it's the innards of spanakopita, made into a nice solid omelette that you can slice into small pieces for the potluck. Delicious hot, tepid, or cold.
