We usually let it sit for about 20 minutes. Are you suggesting longer than that?
NP, but I usually let mine sit out for an hour or two. Then I stretch by hand and do some spins in the air with the dough on my fists for the kids. If the dough won't stretch, I let it rest like PP recs, otherwise it will rip and that sucks.
