Yup - definitely 1 nonstick pan - for eggs, grilled cheese, etc, and one pot - will work for pasta, taco meat in a pinch (better than nonstick pan). Good knife and cutting board. I assume you are driving; if so consider small amounts of ingredients you might need (like one stick of butter, a little Tupperware of cooking oil or olive oil, salt and pepper, herbs/spices), etc. It gets expensive to buy all that stuff. Dishwasher liquid, dish towel.
We go to a beach condo every year and I plan for breakfast and lunch in, and maybe 1-2 dinners, and the rest out. In addition to what I mentioned above, I premeasure pancake mix (that frying pan will work); we have other grilled sandwiches like ham and cheese; Mac and cheese for the kids... Truly with what has been suggested you can do a lot.
