Why are you bringing so many paper products?

Can't you stuff towels onto beach bag? Fill cooler with the non perishable food (it's just empty space).

Where are you staying? A condo? Hotel?

Put the stroller(s) in a waterproof cover and strap to the roof. Pack clothes for 4 days and do laundry when you're there (bring detergent). We also have two of these cheap foot lockers that the kids used for camp and they hold a ridiculous amount of clothes, towels, etc. and they don't take up much space in the car. All the clothes, beach towels, and favorite blankets for a family of 5 went into the two foot lockers.

Hm this is great as I know that the turtle thing on top will make my car too tall to fit in the parking garage. Thanks for this idea. I'm going to measure to see if it will work.

+1 This is exactly what we did.

We buy groceries after we get there, bring an umbrella stroller instead of our regular one, and heavily edit the clothes/toys/extras we're inclined to bring. If you still have no space, get one of those car-top hard cases to bring stuff in.

OP here do you bring 7 days worth of clothes or only 4 and do laundry in the middle?

We have a minivan and can fold down the third row. Our kids are older, so we don't have to bring a stroller, but we do have a beach cart. We also don't have to bring plates or cups as those come with our rental. We also don't bring a ton of clothes and plan to do laundry while we're there.

And yes, buy soda and food at the destination. Bring any thing you can't get easily at your destination or if you are pre-making some food for the week but the easy stuff stop at the grocery store at the beach.
