It was not a mistake, sorry my post was not clear. We had to take out the (old) cabinet to replace the (old) fridge, not to replace the cabinet. The old fridge was much smaller (and we couldn't find anything we liked with the same dimensions). Now that we have the new fridge in the space, we realize we can put the cabinet back if we move it over and trim the countertop down (so instead of a 2" overhang on the opposite side, it'll have a 1" overhang).

I left messages with several local countertop places this weekend; here's hoping someone comes back with a decent price.

I would call countertop installers and ask if you bring it to them, would they do it for less?

We had to take out the cabinet next to our fridge to get a new one that was bigger. We can fit the cabinet back okay, but the granite on top is about 2" wider and needs to be trimmed to fit. Anywhere we can take it to have it cut down? It's a pretty portable piece, about 13" x 25". Thanks!
