I love skiing but if you aren't going to keep it up (and it isn't a cheap sport) then I honestly think you are better off just going someplace warm. Especially because Xmas time is still early in ski season and conditions may not be great. I will say that I always try to fly southwest on ski trips so that I can adjust the destination depending on where conditions are good.

We went there for winter break last year. We had a good time because we were visiting friends but it was actually pretty cold and not very interesting.
