I make my money in the US so actually the plunging pound would benefit me.

That's completely illegal and is considered a violation of your tourist visa.

You will need to pay tax in the UK if residing there, wherever you might be working.

You're a US Citizen? No problem. Just go. You'll have to leave periodically and re-enter to make sure your tourist visa remains valid. Get an international driver's license, make sure your health insurance is good in the UK.

You can't really work there. Provide goods and services in the UK and/or receive money for payment for work done, but if you're paid in the US in dollars that shouldn't be a problem. You may have issues opening a UK bank account or getting a UK credit card (KYC can be a problem). Don't expect a US tax break and you could be subject to UK taxes.

If you want to be legit, go and find out whether you score enough points to be granted a work visa. Depends upon profession, education and income.
