Target is the best IMO. There's something for everyone.

I teach high school, and though DW thinks it not very classy, I LOVE Olive Garden!

First grade teacher here-- that sounds like a tasty gift! I'd like it. (Just make sure that your school is near an Olive Garden-- I think the only ones around here are Tyson's, fall church and laurel, right?) I love the mushroom ravioli.

What is the gift card for?

It's generous of you to give any gift card. Amazon and target are safest but it's nice to get restaurants or Starbucks because it forces me to treat myself. I don't usually go to Olive Garden but it would be appreciated just the same and I would take my children.

OP, I think a $25 gift card anywhere is very generous. If you want to play it safe, you can do Target b/c she can buy groceries, toiletries, etc. But I'm sure she'll feel appreciated.

I have a friend who has been an elementary school teacher for many years. She told me the teachers sometimes swap their Christmas / end of school year gift cards with each other in the teachers lounge. My friend likes the starbucks ones, so she swaps others for their starbucks gift cards.

Sure it will be fine. And if its not she can trade it with a teacher who got one for Barnes and Noble, etc.

Sure, but Olive Garden for 2 usually cost more than $25 - I'd go to a place that she can eat for two for $25. Their food quality is not very good either.
