I'm jealous by the way. We go most years but didn't go last year.
Mostly we just chill at the beach and swim endlessly. I've seen sea turtles, Sharks (mostly babies, one harmless juvenile spotted by the lifeguard), manatees and many dolphins in the water. It's a gorgeous place.

Pensacola, although a great town, is over an hour. I'd personally drive it to see the Blues and for the museum, but you might not.

Deep sea fishing is generally an all day affair, so not sure we want to be bound to that.
Anyone have any ideas or experiences in that area? We don't mind driving an hour or so any direction. We are both quite active, so hikes or other activities are fine.

Go to Stinky's Fish Camp for dinner

If you go to this website you can pick various categories to see some ideas. Santa Rosa Beach is about 5 minutes down the road from Seaside.

The Donut Hole is a must. I'd recommend Stinky's over Goat Featgers:

The Naval Aviation Museum at the Navy base in Pensacola is amazing (and free)! I've been going to Pensacola for years, first time to the aviation museum earlier this year.

Pensacola is an interesting town. You might check to see if the Blue Angels are practicing while you are there.
