Be kind and friendly when leaving. Do your best to stay on good terms with him. But yeah, all you have to say is "I love this job, however I've been offered one where I'd be making a substantial amount more and I can't say no". Any manager worth their salt will understand that in a heartbeat, even if he is sad to see you go.
