We had a similar issue and just went back to diapers for now. Reading your post, kind of makes me wonder if should just stick it out longer. Originally we were going to wait until there were more consistency in dry diapers in the mornings.
Not the above poster but we cut diapers and it took 2 weeks of bed wetting for my kid to be trained. Totally glad we stuck with it! We layered sheets (bed-protective cover- sheet- protective cover-sheet) to make middle of the night changes easier.
One caveat...my child would wake up when he wet. had he not/been a kid who really could sleep completely through it then this probably wouldn't have worked. but my normally very heavy sleep er did wake up when he wet the bed which was usually around the same time every night, 1-2am.
We have also never limited liquid or woke him up to pee. After training he just held it all night. Never gets up to go.
