I love this crock-pot curry (it's on the mild side, so good for kids too). I make it vegetarian with a whole cauliflower (cut into pieces) instead of chicken breasts. I've made it for meal trains several times and send rice along with it.

Some sort of soup or chili. They will probably get a lot of pasta dishes and that's not usually that nutritious.

Meatless quiche

If they like mushrooms, see Mark Bittman's goat cheese mushroom tart (a little fussy to make, but delicious, and you can make 2-3 of them with just a little more effort than 1)

Homemade calzones filled with ricotta and spinach or kale
Baked mac and cheese, salad, bread
Veggie pot pie
Any type of meatless baked pasta - lasagna, stuffed shells, manicotti

Also, Indian food is great. Some Chana Masala or Channa Saag with a side of rice, raita and naan. It keeps well and is soo tasty!

I've signed up for a meal train for one of my friends who just had her fourth kid!
Anyone have a good suggestion for a vegetarian casserole/tray type of thing her DH can just stick in the oven, or they could potentially freeze for another night?
