I have 4 yo twins. One of their favorites is Shepherd's Pie.

I brown the meat with a package of beefy onion soup mix, diced onions, minced garlic, salt and pepper, dried oregano, dried basil, put in a pie plate, put some frozen peas and carrots (thawed in the microwave) on top and then cover with mashed potatoes. When I have time, I make mashed potatoes from Yukon gold potatoes. when I don't, I use a bag of Idahoan mashed potatoes. Dot the top with a few pats of butter or a little finely grated cheddar cheese and baked until warm and the potatoes have a golden brown color.

I make mock pizza every few months. I line a pie dish with lasagna pasta. Then spread a little sauce. Then brown chopped meat and make meat sauce, and pour that in the pie dish. Then cover the whole thing with shredded mozzarella cheese, and bake until the cheese is melted the way I like.

Whole purpose of lasagna noodles is to make it easier to serve from the pie dish.

You could make a ground beef wellington. Cook the hamburger meat in small portions maybe a little smaller than hamburgers (season with salt and pepper). Don't cook them fully through, but get them brown on both sides (and not fully cooked on the inside). Then put them aside.

In the pan in which you cooked the ground beef patties, put in a little olive oil and throw some mushrooms, sherry, thyme, maybe a little parsley. Cook for a few minutes.

Roll out a puff pastry sheet. Put one of the ground beef portions in the sheet, coat with Dijon mustard, and then top with the mushroom mix and wrap up in the pastry sheet. Coat with egg and bake at 425 degrees for about 25 minutes.

my mom's spaghetti sauce with beef:

Saute 1 large chopped onion and 2 or 3 cloves of garlic in 3-4 TB of oil until golden brown, then stir in l lb. of ground meat until browned.

Add 2 28 oz.cans of tomatoes (preferably San Marzanos, chopped) and a 6 oz. tin of Italian tomato paste. Salt & pepper, plus a bay leaf (2 if small).

If you can get fresh basil, great - if not then at least 1 TB dried basil, and of course, oregano really to taste. I also added a little rosemary, crushed, but it is optional.You will need to add water, too, if the mixture gets too thick. Bring it all to a boil, then turn down the heat and cook at least 1-2 hours.

Even my uber picky 3 year old eats it! My 1 yo loves it too.

Plus meatballs as someone mentioned. 1.5 lb beef, 1/2 lb pork. 1 egg, 2 slices of bread broken up, large handful of chopped parsley, 3 large pinches of salt. 3/4 cup of parmesan or romano. mix, shape, fry in oil on all sides until brown.

Skip the chilies, or add them after you've taken the kids' portions out. Yummy and easy.

Oh 1 more - fresh baby kale (sautéed in olive oil and golden brown garlic.plus cooked ground beef plus cannellini beans. Mix it all up.

Or meatballs with the spaghetti. Roll em up with some egg, Italian parsley, breadcrumbs and parm, brown sides in olive oil, and cook in the pasta sauce on low low 2 hrs.

Stroganoff. I use the egg noodles, 2 cans cream of mushroom soup, 1 can beef broth, and sour cream. Mix the beef in there.

Feeling bored with the same old, same old. Here's our typical rotation (what I'm trying to avoid):

spaghetti
hamburgers

chili
sloppy joes
lasagne
meat loaf

Must be something that a 2 and 4yo will eat (so nothing too spicy). Anyone have a recipe they love?
