For stark white I'd do HD laminate (cheap and the new edging looks Quartz-ish), corian (matte finish), or Quartz. Marble or granite won't be plain white.

A friend just got quartzite in her kitchen and it looks just like marble but more durable.

We love our Zodiaq counters! I believe they have whites among their color options.

We've done both pure white quartz and pure white corian. Both clean very easily with soft scrub with bleach, and were stain free years later. To those who say "ew" to corian.... We just redid a high end kitchen this year that is all white gloss cabinets with some flat front walnut cabinets on the island. Very contemporary, room and board, midcentury modern kind of look and gets rave reviews. We did our island in corian, and specifically not quartz, because the corian white is a far smoother, more contemporary look that styles with the vibe we are going for. (We had previously done an all white gloss kitchen 4 years prior, and used quartz back then). The corian looks very cool and current. And was about half the price of quartz. I wouldn't do like blue corian - that looks 80s. But a white corian counter looks pretty cool.

No corian, gross! I would say Quartz. We just remodeled and I was planning on Quartz, though deeply love marble. At the VERY last minute I convinced my DH to go with marble and couldn't be happier! We have a great sealant and as long as you don't leave anything on it overnight, it won't stain. It will etch, but that doesn't bother me at all. I love it!

Quartz is probably the highest-end white counter you can get.

Corian? You can sand off stains.
