No, you really don't. The only thing is that if you have your heart fixed on a particular character meal, you pre-select that one. But I've been to Disney twice during slow seasons and never made a reservation more than six hours out using the app (and many nights just walked up to a restaurant) and selected all fast passes the night before or morning of and never needed half of them. You can plan of you want to, but during slow times no actual need.

We went earlier this year during a slow time (January) and it was still very helpful to have fastpasses. There were certain ones that were gone by the day and had to be reserved in advance (though only a couple of weeks in advance, not the 60 days).

Are you planning to pull kids out of school? My kids are the same age and we are tied to the school calendar now.

Would also be a decent time for a cruise, as I think hurricane season will be over (check on that). My kids really liked one of the big cruise ships with zip lines, rock walls, water slides.
Or maybe someplace like Costa Rica, that has nature/animals.
But with those ages and a non school break, I think I would do disney.

NP here. We usually eat quick serve. The FP reservation is relatively new. When we went in the past during off peak when kids were younger, we never used FP. We still avoid peak times but reserve FP in advance. We don't always use all 3 if it is inconvenient to get to but we always use at least 2 that we booked in advance. Why wait in a line if you don't have to. Just use them for rides you know have long waits - Safari at AK, Peter Pan at Fantasyland, Toy Story Mania, Test Track, etc.

If you ever wanted to take them to Disney, that's when to do it. Shouldn't be crowded at all, and they're the right age. Prices will also be cheaper and you don't have to plan the meals and fast passes.
