If you did these it would be nice to have some without hot dogs for non pork eaters.

OP I have done this before. Given the parameters of your event, I would go with: deviled eggs, blueberry muffins only if you can make them small enough, corn muffins and/or turkey/cranberry canapés. Ham or BBQ on biscuits would be my alternatives.
Sausage balls! They get demolished at every party I take them to. Even my picky nephews eat these up.
1 lb. hot pork breakfast sausage
1 lb. sharp cheddar
3 c. Bisquik
Knead until fully incorporated, roll into teaspoon / marble-sized balls, bake @425F for about 10 min.

I think deviled eggs are your best option, given your constraints. They are also the least embarrassing as representatives of our national cuisine, when compared to wings or pigs in a blanket!

What about burger sliders? Although that's not going to fly at room temp. If you have access to a croc pot or hot plate, what about chili?
Deviled eggs are a great idea, as are cornbread/corn muffins.

I think deviled eggs, turkey cranberry sandwiches/canapes, broccoli salad, tomatoes stuffed with cream cheese and bacon, yogurt with raspberries and blueberries (red white and blue) or peanut butter cookies would all work.

We are currently overseas and DS's school has asked us to represent the Americas at the Christmas food table. There are only a handful of US families here, and we are being joined by Canadians (who are doing something with maple syrup), Mexicans (nachos & guac), and an argentine family (empanadas).
I need ideas for appetizers that are quintessentially American that can be served cold or at room temperature as finger food. Bonus points for things that can be made ahead by as much as a day. As much as I wish I could chop up a few twinkies & be done with it, we need ideas for savory, unique-to-the-USA apps.
Europeans are already sorted into their various factions (Spain/Francophone countries/holland-Germany/scandis)
Indians have their own table
Chinese are covering "Asia"
So I need to stay away from foods that tread too close to any of the above.
Some of my ideas so far:
Mini blueberry or corn muffins
Sandwiches, quartered and served like canapés - BLT or PBJ
Deviled eggs
Pigs in blankets or corn dogs (don't know how these are at room temp or how far in advance they can be made & not get soggy)
California rolls
