Quiche essentially is a baked custard. In its most traditional form quiche would not have any cheese at all. I believe even Julia Child alludes to or addresses this point specifically in 'Mastering' (I am not at home so can't pull out my copy to check). Don't get me wrong, cheese in quiche is great but I wanted to let you know that no cheese was fine and you would have been very 'authentic' in your cookery if you had not added the cheese!

Was just looking for this answer because I just did the same thing! With 15 minutes left to cook I opened up the oven and then realized I didn't put the cheese in. I just want to head and sprinkled it on top.

I wouldn't worry about it. Not everyone likes/ puts cheese in quiche. If people miss it, you can melt it on top of their pieces.
