DD doesn't eat sandwiches either - she wont (3 yrs).
She eats cooked broccoli w/parm, cooked carrots, cottage cheese, unsweetened applesauce, strawberries, fresh apple slices w/lemon, homemade rice & beans (cooked dry beans), organic veggie soup, spaghetti, hard boiled eggs, cucumbers, etc. .
DD isn't hungry much for dinner, so I try to pack in as much nutrition as possible for her lunches.
This sounds like a wonderful diet. Kudos to you for having her eat so well.
BTW- don't push bread on her. I myself grew up not really liking bread and now that I'm older I'm so glad I never really developed a taste for it, unlike most people who seem to crave it. It's not particularly healthy, either.
