The academic CV is a very different document than a resumé. No bullet points or paragraphs.
Usually after the heading you'll list your degrees, then employment history (obviously only jobs pertinent to academia).
Then publications, grants, conference presentations, courses taught, PhDs overseen, committees, service to the profession, special trainings, and languages spoken. Order may vary.

The strongest formatting I've ever seen is from high-level power academics with considerable research grant experience.
They list every committee and fellowship. The publications are broken down by category, with peer-review and news outlets as separate headings. Talking head appearances are are plentiful. Courses taught; Ph.D.s managed over the years...all beautifully documented.
I've never seen extra curricular activities, only conference-related travel.

If you truly mean CV with academia, then the way to stand out is to have as many prestigious institutions, awards, fellowships, and publications and as long of a CV as possible.
But even then, like everything else in life, the best way to stand out is to have someone make a phone call for you.

Should i include extracurricular acivities on the academic cv? I would appreciate all and any pointers on how to make a strong cv that stands out. Should i use bullets or paragraphs to describe job experience and leadership? TIA
