I know it is summer. But I have just recently discovered how quick and easy it is to make soups and how convenient they are for leftovers. I can share a few we have loved:

This is AMAZING. Been making it for years.
I also threw together a soup last week with lentils, bulgur, stock, celery, onions, carrots and a few spices. It was delicious.
